2 lbs ground beef or turkey 2 eggs 2 Tbs. water or broth 1/4 C catsup 1 tsp each: garlic powder, onion powder, salt, , dried parsley, soy sauce or to taste 1/8 tsp black pepper or to taste 1 cup fine dried or fresh bread crumbs- or enough to bind 2 large onions sliced into rings 4 large Roma or other firm ripe tomatoes sliced into rings This meat loaf is simple but extraordinarily delicious. Mother made it on the stove top for years. I know baking a meat loaf in the oven is easier but I wanted to make a special meal that reminded me of my Mom's cooking. The whole house smelled wonderful when she made this. I do hope you like it!. Combine everything except the fresh tomatoes and onions. Use enough breadcrumbs to make a firm meatloaf mixture. Shape mixture into an 6 inch round loaf or so. In a heave duty 10 inch skillet, add some oil ( I like a few Tbs. of olive ) till hot. Place the meatloaf into pan and pat down to form an even top, leaving a few inches of space around it. Brown the meat loaf on one side, very carefully turning it with one or two wide spatulas. Brown the second side a few minutes. Then turn heat to low. Place sliced onions and tomatoes over and around meat loaf. Cover and cook 45 minutes to 1 hour. When done carefully remove meat loaf to platter. Turn heat to medium high and cook the tomatoes and onions a few minutes longer in any of the juices until liquid is almost evaporated. Spoon mixture over and around the meat loaf. Yield one round savory meat loaf Serves 6. Serve with mashed potatoes and green peas.The meat loaf is great cold for meat loaf sandwiches the next day. Also freezes well.
