Nellie's Zucchini Casserole (A) In 2 Tbsp Olive Oil saute': 1 pkg (6 oz) Uncle Ben's White & Wild Rice until tender. Add 1.75 cups Water, cover and Simmer for 25 minutes. *Do Not add Rice Seasoning mix at this time* (B) In another pan, saute' (in 1 cube Butter): 1 Onion, chopped 1 Green Bell Pepper, chopped 2 stalks Celery, chopped 2 Green Onions, chopped 5 medium Zucchinis, chopped 3 medium Tomatoes, chopped 12 Mushrooms, sliced 1 clove Garlic, minced 1 small pkg Sliced Almonds (C) Add the following according to taste: The Seasoning Mix from the Rice pkg Seasoned Salt Garlic Powder or Salt Onion Powder or Salt Sweet Basil Oregano Italian Seasoning (D) Mix into the Rice. Add 1/2 of this mixture into a baking dish, add a few slices of Monterey Jack Cheese. Add remainder of mixture, and completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 minutes in a pre-heated 375 degree oven.

Nellie's
Zucchini Casserole

(A) In 2 Tbsp
Olive Oil saute':
1 pkg (6 oz) Uncle Ben's White &
Wild

(B) In another

good recipe.. i varied it using what I had in the garden... one yellow squash... and one large zucchini... also one can of diced tomatos to supplement the 3 small tomatos i had ripe..and no greeen pepper....... I also added a bit of chicken broth and added the rice to the tomatoes zucchini and onion when it was around 3/4 done.... andcooked covered until the rice was commpletely done and most of the liquid was absorbed.... then added some grated Monterey Jack and stirred until the consistancy was like a risotto...
