Hi everyone! I've been using the crockpot alot this week, here is one of the recipes I made. NORMANDY CHICKEN WITH APPLES 3 cups apple cider (I used fresh from the cider mill) 3 (1.8 ounce) boxes leek soup mix (like Knorr's) 2 tsp dried thyme 1/2 tsp grated nutmeg 1 1/2 pounds red new potatoes, peeled and diced (I didn't bother peeling though) 4 celery ribs, thinly sliced 6 green onions, thinly sliced 3 apples, cored and cut into 16 wedges each 3/4 cup dried cranberries 2 pounds skinless, boneless chicken breast halves, halved crosswise In crockpot (at least 4-5 quart), combine the cider, dry soup mix, thyme and nutmeg. Stir to blend. Add potatoes, celery, green onions, apples and cranberries. Tuck the chicken down into the mixture. Cover and cook on low at least 8 hours, making sure the potatoes are tender. Enjoy!!
