In another plate fork mix eggs. One at a time dip 1/2 inch thick cored sliced tomatoes into eggs, then matzah meal, pressing meal into surface of tomatoes . In a heavy skillet heat oil and fry tomatoes, turning only once until golden brown. Drain on paper towels.
