from NY, USA 8 oz penne or ziti pasta or pasta of choice 2 Tbs butter or margarine 2 Tbs.fine chopped onion 1 clove garlic minced 2, 8 ounce cans tomato sauce 1, 6 oz can tomato paste 1/2 empty tomato paste can filled with Jack Daniels 1 tsp sugar 1 tsp dried basil or 1 Tbs fresh chopped 1 cup half and half or heavy cream Fresh grated parmesan or Romano cheese When my daughter requested penne with vodka sauce one evening; I had no vodka so I came up with this recipe. We both agreed it was an enjoyable substitute ! In a sauce pan sauté onion and garlic in the butter or margarine until softened. Stir in the tomato sauce, paste , Jack Daniels, sugar, basil and salt and pepper to taste. Bring to a boil and then lower heat and simmer about 10 minutes, stirring occasionally. Finish sauce by whisking in enough cream for desired taste and consistency and cover and set aside. . Meanwhile cook pasta al dente. Drain pasta and serve with the sauce. Pass cheese separately.
