2 bunches broccoli rabe coarse chopped 1 lb gemelli or other short pasta 2 Tbs olive oil 4 anchovy fillets ( optional ) 2 cloves garlic coarse chopped 1/2 tsp red pepper flakes 1 15 oz container ricotta cheese 1 cup milk or cream In pot of salted boiling water cook broccoli rabe 1 minute and drain. In same pot cook pasta till al dente . Drain pasta and return to pot. In skillet with olive oil, add anchovy, garlic, pepper flakes and cook about 1 minute till fragrant. Add broccoli rabe and salt and pepper to taste, Cook and stir about 5 minutes. Stir in ricotta and milk until heated through about 3 to 4 minutes. Add this to the pasta and season with salt and pepper. Toss to combine. Serve immediately Serves 6.
