Peanut Brittle INGREDIENTS: 1 1/2 tsp. baking soda 1 tsp. water 1 tsp. vanilla 1 1/2 cups sugar 1 cup water 1 cup light or regular corn syrup 3 tbsp. butter or margarine 1 lb shelled peanuts, unsalted DIRECTIONS: Grease 2 cookie sheets, keep warm. Mix baking soda, water and vanilla in a small dish and set aside. In a large pot, mix sugar, water and corn syrup. Cook over medium heat, stirring occasionally until to 2400F on candy thermometer. Stir in peanuts and butter. Cook, stirring constantly, to 3000F on candy thermometer. Remove immediately from heat; add baking soda mix. Stir quickly but thoroughly. Do not stir too long or the candy will go flat. Pour half onto each cookie sheet. Spread quickly to 1/4" thick. Cool and break into pieces. About 6 dozen candies.
