1 1/2 pounds Stewing beef, cubed 1 tablespoon oil 1 clove garlic, crushed 8 slices of bacon 1 medium onion, chopped 1/4 teaspoon oregano 1 cup water 1/2 cup sweet red wine 2-3 cups of raw pumpkin, peeled and diced 3 tablespoons red-wine vinegar 1/2 cup raisins 1/2 cup cashews salt and pepper In a large casserole, add oil, garlic and bacon. Saute over a low flame for 2 minutes. Being careful to keep the bacon soft. Add onions, organo and beef. Brown meat lightly. Pour in water and wine; Simmer, covered for 35-45 minutes. until meat is almost done. Stir in the pumpkin, red-wine viengar, raisins and cashews if desired. Simmer, covered, for 10 minutes, remove the cover and continue to simmer for an additional 10 minutes. add salt and epper to taste. accomapny with white rice. serves 6.
