PICKLED PIGS FEET from: Princess Pamela's soul food cook book 8 pigs feet 1 onion , sliced 1 carrot, sliced 1 red pepper pod 1 bay leaf sprig of parsley 1 teaspoon whole cloves 1 teaspoon dry mustard 1 teaspoon celery seed 1/2 teaspoon salt 3 or 4 peppercorns Vinegar Clean the pigs feet throughly. Split them with machette or cleaver, and then cut in half again, if you wish. Place in pan and cover with cold watr and vinegar, allowing 1 cup of vinegar for each 3 cups of water. add the remaining ingredients. Bring to a boil. Then cover and simmer gently until pigs feet are tender. serves 8 Lei NYC
