from NY, US olive oil 1/4 cup chopped onion 1/2 cup chopped bell pepper 2 cups very finely chopped Portobello mushrooms 12 oz of vegetarian "meat" or soy burger meat use 12 oz of vege burgers chopped 3/4 cup tomato sauce ( canned is fine ) 1 tsp Dijon mustard dash sugar to taste This is a nice change from beef. I often buy the dry soy nuggets and reconstitute them as instructed. Also the ready to use soy meat granules can be found in the freezer section of many supermarkets. Sauté onion and pepper ( add garlic if you wish ) in olive oil until softened. Add the mushrooms and cook and stir several minutes. Add the vege "meat" and season to taste with salt and pepper. Stir in the sauce , mustard and sweetener. Cook and simmer 10 minutes. Serve over Buns. Yield 4 servings.
