from USA Potato Lefse ( Scandinavian wafer thin bread ) 3 cups cooled mashed potatoes 3 cups sifted flour 1 tsp salt 1 Tbs sugar 2 Tbs shortening 2 Tbs cream Mix all ingredients well together. Use one Tbs at a time, rolling thin on a floured surface. Bake on both sides on a griddle. Cool on dish towels, keeping separated from one another. To serve: Spread with butter and sugar and roll up.
