Hello all, I've a lurker for quite a while now and thought I'd post finally. This is more of a guideline than a recipe for potato skins. Wash thoroughly some medium to large baking potatoes Wrap in foil or place on baking sheet in 350'C oven for about 40 min. to an hour. When cool enough to handle, slice lengthwise and scoop out potato pulp leaving about 1/2 cm on skins Brush lightly with oil or vegetable oil and place on baking sheet in oven again for about 15 min. (or until slightly golden) - this step is optional if you are putting such things as shredded cheese or bacon. Garnish as desired ideas: chopped green onions cheese bacon salsa sour cream
