Julienne or coarse grate or thinly slice into a bowl. Mix in desired amount of garlic. Add olive oil and vinegar to taste, Season with salt, pepper and a bit of sugar. Mix well and serve well chilled. This really tastes great served with grilled meat or poultry or as a side salad with a vegan meal. Yield: 4 servings.
