150g/6oz short crust pastry 15ml/1tbsp oil 1 medium onion, thinly sliced 75g/3oz bacon, diced 75g/3oz button mushrooms, sliced 100g/4oz Stilton Cheese, crumbled 8 Asparagus spears (fresh, frozen or canned) 2 eggs, beaten 125ml/15fl oz milk Salt & Pepper to taste 1. Roll out pastry to line a 20cm/8 inch flan ring and bake blind at 200°C/400°F/Gas mark 6 for about 15-20 minutes 2. Heat oil and sauté onion and bacon, drain on kitchen paper and then place in base of flan case, followed by a layer of mushrooms and the Stilton. 3. Beat together the eggs, milk and seasoning and pour over the ingredients in the flan case. Bake at the same temperature as before for about 15 minutes. 4. Trim the asparagus and (if fresh or frozen) blanch in boiling water, drain and place on top of flan, then return to the oven for a further 10 minutes. 5. Serve hot or cold
