DESSERT With all the Holidays fast approaching, the time it takes for this one to 'mellow' out should have it ready for New Years Eve..... if you start now! ++++++++++++ RUMTOPF (RUM POT) +++++++++++ 1 can (1 lb.14.oz.) whole peeled apricots, drained 1 can (1 lb.13 1/2 oz.) sliced pineapple, drained 1 can (1 lb.14 oz.) peach halves, drained 2 cans (1 lb.14.oz) Bartlett pears, drained 1 container (16 oz.) frozen whole strawberries, thawed, drained 2 cups sugar 4/5 qt. light rum Cut apricots in half; remove pits. Cut pineapple slices into 1 inch pieces (or use chunk style). Cut peach & pear halves in half. In a large container layer the fruits, topping with strawberries. Add sugar and rum. Stir to mix. Cover with plastic film. Let it stand in a cool, dark place for about 1 week, then store in refrigerator, covered tightly, to mellow. Store for a month or so, Serve, well chilled, as a deluxe fruit compote or as a sauce over ice cream or sherbet.
