from NY, US 1 cup each steamed or cooked: peas, diced green beans, diced carrots, diced turnips, diced white potatoes 1 cup julienne ham or cooked tongue 1 cup chopped cooked lobster meat 2 Tbs capers 6 gherkins sliced Dressing: juice from one lemon 1 cup mayonnaise 1/4 cup cream Garnish: 1 to 2 large beets cooked and sliced 3 hard boiled eggs, cut into wedges red caviar This is very similar to my other Russian salad I contributed but more hearty with the meat. Combine everything except dressing and garnish. Place the mixture in a large salad bowl. Mix the dressing and spoon over the salad. Surround the salad with the slices of beets topped with a bit of caviar. Place the egg in center of the salad for garnish. Toss lightly at serving time. Nice to also have extra dressing on the side for those who like it. Serves 8 to 10.
