from brooklyn, ny Serves 4. 2 pounds fresh salmon, preferrably fillet 1 medium size green pepper 1 medium size red pepper 1 medium can large pitted black olives 1 large white onion 2 ripe plum tomatoes A couple of branches fresh thyme & parsley tied up together 1 tablespoon extra virgin olive oil 2 tablespoons white cooking wine 1 tablespoon red wine vinegar 1 tablespoon crushed or finely chopped garlic 1 teaspoon seasoned salt 1 hot Jamaican pepper (Scotch bonnet, if available) Clean salmon with lemon and vinegar. Rinse well and place in a deep baking dish. Sprinkle seasoned salt over salmon, followed by garlic, cooking wine, red wine vinegar and olive oil. Add slices of tomatoes, onions, black olives and red and green peppers to top of salmon. Add thyme/parsley and jamaican hot pepper (but do not cut or puncture hot pepper). Cover with aluminum foil and cook in a preheated oven at 350 degrees for about 30 minutes (cooking time may vary). Serve with baked potatoes or white rice.

Serves 4.

1 medium size red pepper
