1 1/2 lbs salmon fillets without skin 2 Tbs butter chopped into coarse pieces juice and zest of one lime salt and pepper to taste 2 Tbs oil ( for pan ) 1 cup Tomato Kaffir Lime Salsa ( recipe below ) Cut up salmon into chunks and place in food processor and pulse to grind coarsely ( not puree ). Add butter and pulse briefly so butter is reduced to smaller pieces . Place mixture in a bowl and mix in lemon juice and zest and salt and pepper. Make burgers by throwing salmon back and forth between hands to eliminate any air pockets and to shape them Makes 4 burgers and chill till firm. Add oil to pan ( or greased grill ) and cook burgers till done about 4 minutes per side. Place burgers on shredded lettuce lined bottom sesame seed buns, place on burger and cover with salsa and place on top bun. Yield 4 servings. TOMATO KAFFIR
LIME SALSA

6 large,
ripe tomatoes cut into 1?2-inch dice
2 medium red onions, cut into 1?4-inch
dice
12
kaffir
lime leaves, stemmed and minced, or the grated zest of 3 limes
Juice of 6 limes
1?4 cup
soy
sauce
3 red jalapeño chiles or 4 serrano chiles, stemmed and minced
1?2 cup extra-virgin
olive oil
Kosher salt and freshly ground black pepper to taste

In a large, nonreactive bowl,
combine the tomatoes, onions, kaffir
lime leaves, lime juice, soy sauce, jalapeños, and olive oil and mix gently. Season with salt and pepper. Use or store.

Makes 8 cups
Lasts 2 weeks, refrigerated
