2 salmon fillets olive oil salt and pepper Dressing: 1 1/2 cups baby arugula 1/4 cup mayonnaise 2 Tbs chopped chives 2 Tbs orange juice salt and pepper to taste 12 cherry or grape tomatoes cut in half 1/2 cup more baby arugula 4 flour tortillas Season salmon with salt and pepper, brush with extra virgin olive oil and broil skin side down until flakey and done. Set aside. Combine 1 1/2 cups of the baby arugula, mayonnaise, chives, orange juice in a food processor and pulse to make a dressing consistency or as desired. Season with salt and pepper as desired. Chop salmon into bite size pieces. Spread dressing equally among 4 tortillas. Distribute tomatoes and arugula on tortillas and divide chopped salmon on top. Roll up tightly. Yield 4 wraps. Note: make healthier by use low fat mayo and or whole wheat tortillas. One may also substitute another favorite fish as desired. Serve tortillas with some side salads of choice: I served mine with macaroni salad and coleslaw.

salmon fillets

Dressing:

Season
