from NY, USA 4 pieces of fresh salmon filet ( about 1 lb ) 16 pieces of phyllo pastry sheets 1 stick melted butter or margarine Mango curry sauce: 1 large ripe mango, coarse chopped 1/2 cup mayonnaise, maybe a bit more if desired 2 tsp curry powder or to taste 1/2 cup toasted chopped walnuts ( optional ) Make the mango curry sauce by combining ingredients and chill well. To prepare salmon: salt and pepper pieces. Lay 2 sheets of phyllo on flat surface and brush with melted butter. Add 2 more sheets and brush with melted butter. Place 1/4 of mango mixture in middle of phyllo several inches up from bottom edge. Place on salmon. Fold ( roll ) phyllo over salmon and tuck under edges. Repeat for 3 more servings. Place salmon pastries into a buttered baking pan and brush tops of pastry with more melted butter. Bake 400F about 25 minutes or until pastry is golden. phyllo pastry sheets

butter or margarine
Mango curry sauce:
1 large
