Serves 2 1 cup chilled tomato juice or V-8 vegetable juice 1 cup diced tomato 1/2 cup diced red or white sweet onion 1/4 cup diced peeled and seeded cucumber 2 Tbs olive oil 2 Tbs balsamic vinegar 1 cup plain yoghurt salt and pepper to taste 3/4 pound cooked small shrimp or seafood, chopped in bite size pieces if needed. Garnish : 2 scallions sliced and some chopped fresh parsley A refreshing soup for the summer. In two soup bowls divide the ingredients in order given. Garnish with scallions and parsley. Multiply ingredients for increased servings. Note: add a dash of hot sauce to each bowl if you like it.
