Here's one of my favorites that will go with just about any main dish.... or can be a main dish on its own served with a salad. SLICED BAKED POTATOES Prep time: approx. 15 min; Bake time 1 hr. Oven temp: 425 F Can be microwaved - directions follow main recipe For 4 SERVINGS 4 med. even potatoes 1 tsp. salt 2-3 Tbsp. melted butter 2-3 Tbsp chopped fresh herbs: parsley, chives, thyme, sage OR 2-3 tsp. dried herbs of your choice 4 Tbsp. grated Cheddar Cheese 1 1/2 Tbsp. Parmesan Cheese PREPARATION: Peel potatoes if skin is tough, otherwise scrub & rinse; Cut potatoes into thin slices but not all the way through. Use the handle of a sppon to prevent knife from cutting all the way (I use a wood spoon handle that leaves a nice depth of connected potato) Put potatoes in baking dish and fan them slightly to open sliced areas. Sprinkle with salt & drizzle with butter; sprinkle with herbs. Bake at 425 F for about 50 min. Remove from oven and sprinkle w/cheeses. Bake for another 10 to 15 min. until lightly browned, cheese aremelted and potatoes are soft inside. Check w/fork. MICROWAVE DIRECTIONS: Follow preparation as above, placing in microsafe dish or pan; sprinkle w/ herbs and butter. Microwave on HIGH power for 10 min. rearanging potatoes after 5 min. Let rest for 5 min. Sprinkle w/cheeses Microwave for another 4 to 6 min. on HIGH power until cheeses melted & potatoes soft. Sprinkle w/salt. NUTRITION INFORMATION: Per Serving: Calories 235; Portein 5.6 g; Fat 8.8 g; Carbohydrates 33.2 g; Sodium 732 mg; (use a salt substitute if you are on a low sodium diet)
