Smoked Salmon slices (2 per person) creme fraiche capers lime wedges thinly sliced red onion chopped cooked egg yolk egg white cups caviar chopped chives I saw this in a restaurant and here is my rendition of it. This appetizer is meant for taste as well as eye appeal. On a nice round white platter roll up the smoked salmon slices into cigar shapes and place on platter. All around the salmon place some capers, sliced red onion, chopped chives, fresh lime circles, and chopped egg yolk. Place the caviar into hollowed out cooked egg white halves. Place dollops of the cream fraiche around the salmon or also in the egg white cups. Either make as an appetizer of 2 salmon cigars per person or place desired amounts of slamon and garnishes on a platter for larger servings. Then guests can place the garnishes on the salmon and eat as desired.
