SNOW ON THE MOUNTAIN CAKE Makes a lovely presentation and is soooooo good! 3/4 cup flour 1cup sugar 1 tsp. baking powder 14 tsp. salt 4 eggs, well beaten 1 tsp. vanilla 1 cup chopped pecans 1 cup chopped dates 1 jar maraschino cherries 2 small cans mandarin oranges 1 large can crushed pineapple 3 sliced bananas 1 cup sugar (this is a second cup) Drain fruits and sprinkle on 1 cup sugar - continue to let fruit drain. Sift together flour, 1 cup sugar, baking powder and salt. Add eggs, vanilla, chopped pecans and dates. Mix well and bake in a greased and floured 9 X 13 inch pan at 350 degrees until toothpick comes out clesn. When cake is done and cool, build a mountain with: Chunky cake crumbs, fruit, cake crumbs, fruit, etc. Then top with a very generous amount of sweetened whipped cream or large tup of Cool Whip, into which you have mixed 1 cup shredded coconut. Choose a large attractive serving dish to build the cake in and listen to the raves when served!!

1 tsp.
baking powder

salt

vanilla
1 cup chopped pecans
1 cup chopped dates
