This is a sour pork curry popular in Bombay. You can use chicken, shrimp or any meat in it. 2 lbs. lean pork, cut into small cubes 1/2 c. vinegar 4 medium onions, chopped 1 t. minced garlic 1 Tab. minced gingerroot or 1 1/2 t. powdered ginger 1 Tab. mustard seed 1 t. ground turmeric 1/2 t. cayenne pepper 1/4 c. cooking oil 1 c. chicken bouillon 6 med. potatoes peeled and quartered Marinate meat in vinegar, onions, garlic, and seasonings for 2 hours or more. Place in large pot on top of the stove and add the oil and bouillon. (Sesame oil is uded in western India but any vegetable oil will do). Cook over medium heat for 20 minutes. Add potatoes and cook slowly, covered for about 40 minutes or until the potatoes are tender. Add more bouillon if necessary during cooking.
