Dear Dave Here is my mother's recipe for Spanakopita (Greek Spinach Pie). I hope your readers enjoy it! SPANAKOPITA: (13x9x2 pan) 2 large bunches fresh spinach, carefully rinsed and sliced into 1/2" strips 1 large bunch dill, chopped 3 bunches scallions 3 eggs 1 1/2 lbs. imported Feta Cheese salt and pepper to taste about 1C extra virgin olive oil (others will do ok) 1 lb. fillo dough. Preheat oven to 400 F 1. Prepare greens as directed and place them in a large bowl. Salt them--not too much, as the cheese is salty, and let stand for about 15-20 mins. Squeeze out excess fluid from greens. 2. Add cheese, eggs, 1/4C olive oil, salt and pepper. 3. Blend the above. 4. Prepare the pan--grease with oil, the line with a sheet of fillo, grease the sheet liberally with oilve oil. Repeat this process for 10 sheets. 5. Add half the spinach mixture. Place two lightly oiled fillo sheets on top. This is to insure that your botto, filli crust is not mushy. 6. Place remaining half of spinahc filling on top. 7. Cover with 10 sheets or more-- if you like it crunchy-and grease each one with olive oil --like for the bottom layer. 8. Roll up edges, and brush with about 1/4C olive oil. 9. PLace in middle rack of oven and bake until deep golden brown. Let settle at least an hour before cutting. ENJOY. YIASSOU!! Efy

If you want a delicious , delicious, treat I suggest trying this recipe. If I could say MAGNIFICENT in Greek I would. The flakey phyllo and the spinach filling, I'm not saying another word but you MUST try this recipe. I rate it more than five stars!
