The following is a recipe I use for spiced cider. I discovered it many years ago when I walked into a shop to a wonderful aroma. They gave me the following recipes which I have used since. *************************************************************** NOTE THAT ONE RECIPE IS FOR CONSUMPTION WHILE THE OTHER IS NOT! *************************************************************** Clarence Moody's Holiday Punch For consumption (40-50 servings) 3 pieces ginger 6 small oranges 1 3" stick of cinnamon 1 gallon apple cider 8 whole cloves 1 quart pineapple juice 3-4 cardamon seeds 1/2 teaspoon salt 6 lemons Tie spices in cheesecloth. Peel and cut lemons & oranges into thin slices and add to cider and juice. To this, add spice bag and bring to a low simmering boil. Stir as it simmers for 15 minutes then add salt and stir vigorously. Serve hot. Clarence Moody's Holiday Odor Punch NOT FOR CONSUMPTION (use only for the odor, which is wonderful) 1 quart pineapple juice 3 3" sticks cinnamon 1 quart water 16 whole cloves 1 quart apple cider 1 teaspoon allspice 4 pieces ginger 1-2 teaspoon(s) pickling spice Combine all, bring to boil, then let simmer. Clarence Moody's Holiday Punch

1 quart
apple cider 1 teaspoon allspice
4 pieces ginger 1-2 teaspoon(s) pickling spice

Combine all, bring to boil, then let simmer.

I didn't bother making the odor punch but I felt the other was not quite sweet enough for my liking. Do what Dave said, try it once the way it's written try it next the way you like it. Good base recipe though.
