Spinach/strawberry salad Although I'm from Atlanta, I heard this recipe on the car radio while driving through Maine this summer. The program was called " The Yankee Cooker". I tried it at home and it got rave reviews! Spinach Strawberry Salad 6 cups washed spinach, stems removed and torn into bite-sized pieces. 2 pints strawberries, halved or quartered (depending on the size) 1/2 red onion, sliced thin 1/2 cup toasted almonds or pine nuts (1 cup drained mandarin orange slices) I liked it better without them Dressing 1/2 cup dark current jelly 3 TBS balsamic vinegar Melt jelly in small saucepan on low light or in microwave When cool, stir in vinegar. 1. Spinach/strawberry salad

Spinach Strawberry Salad
6 cups washed
spinach, stems removed and torn into bite-sized pieces.
2 pints strawberries, halved or quartered (depending on the size)
1/2 red

nuts
(1 cup drained
mandarin
orange slices) I liked it better without them

Dressing
1/2 cup dark current
jelly
3 TBS
balsamic
vinegar

When cool, stir in

This recipe was very nice! I had no idea that onions could be so sweet but the onions and strawberries definitely bring that out. I opted to toast the pine nuts before including them in the salad. Try this!
