1, 7 to 8 lb rib roast ( bones in ) salt, garlic powder, paprika fine crushed black peppercorns Jack Daniels mustard ( store-bought in jars) Bring meat to room temp, about 2 hours before cooking. Rub well with salt, garlic, paprika and peppercorns. Slather well with the mustard. Place in a roaster pan over a bed of thick sliced carrots, onions and celery. Preheat oven to 450F and roast 20 minutes. Reduce heat to 300F and continue to roast until tested about 120 F with meat thermometer. (This may take a couple hours ) When meat is 120F, remove from oven and loosely cover with foil for about 20 minutes. Meat will continue to cook and should be medium rare. Use the drippings over meat if desired.Serves 4 to 6.
