from Ohio, US 1 medium eggplant 1/2 cup white or red wine vinegar 1 tsp salt 1 clove garlic (or more if you like) crushed 1 tsp dried oregano 1 tsp dried basil 1/4 tsp pepper Olive oil Cut eggplant in one inch cubes and steam until tender. Combine the vinegar and everything else except the olive oil and bring to the boil. Pour this hot mixture over the steamed eggplant and leave it to marinate at room temperature for at least an hour or two, longer if you've got time. Sprinkle it with olive oil before serving. It makes a good appetizer or an accompaniment to main dish.
