Sushi-style Shrimp Salad 4 cups cooked medium-grain white rice, room temperature 2 cups seeded and diced cucumber 1 cup thawed frozen peas 1/2 cup thinly sliced radishes 1/4 cup sliced green onions 1 pound cooked, peeled, and deveined large (31 to 35 per lb.) shrimp (or use crab instead) 1 1/2 quarts fresh spinach leaves, rinsed and crisped 1-2 avocados, diced (optional) whole radishes salt For dressing: 1/2 cup seasoned rice vinegar 2 tablespoons minced fresh ginger 2 tbsp prepared horseradish 2 tbsp sesame oil Combine all dressing ingredients. In a large bowl, combine cooked rice, cucumber, peas, sliced radishes, onions, and dressing. Gently mix in shrimp and optional avocado. Season to taste with salt. Arrange spinach leaves on a platter and spoon sushi salad into the center. Garnish with whole radishes. Makes 4 entree servings. Sushi-style Shrimp Salad

4 cups
cooked medium-grain white rice, room temperature
2 cups seeded and diced
cucumber
1 cup thawed frozen peas
1/2 cup thinly sliced radishes
1/4 cup sliced
green onions
1 pound
cooked, peeled, and deveined large (31 to 35 per lb.) shrimp

For
dressing:
1/2 cup seasoned
rice vinegar
2 tablespoons minced fresh ginger

sesame oil
