2 very ripe plantains 1/2 cup cream of coconut 2 Tbs fresh lime juice 1 tsp grated lime zest salt and pepper to taste 1/2 cup sweet flaked coconut toasted ( garnish ) Peel plantains and cut lengthwise in half. Place halves on greased grill rack. Cover and grill medium high heat about 5 minutes on each side or until they are lightly charred. Stir together remaining ingredients and drizzle over the heated charred plantains. Sprinkle with the toasted coconut. Yield 4 servings. Use as a side dish for meat and poultry. Note: Increase recipe for desired amounts of servings.
