from NY, US For the pastry. 1/2 kg plain flour 1/2 kg self-raising flour 1/2 cup vegetable oil plus extra for frying 1 egg yolk Filling 1kg fresh Anari cheese, unsalted and crumbled 1 cup sugar or less if required 4 tabs rosewater 1/2 teaspoon cinnamon For the pastry, mix all the ingredients together to a fine bread crumb effect. Add enough water to bring them together into a firm dough. Cover with a clean cloth, set aside until needed. In a clean bowl, mash the fresh Anari with a fork. Add sugar, rosewater and cinnamon. Mix together. Roll half off the dough out on a floured surface to 1/3 cm thick. Place spoonfuls of Anari in rows leaving space between the rows. Roll out remaining dough as before. Cover Anari covered pastry, stamp out bourekia using a round 4 cm cutter. Deep fry bourekia turning occasionally until golden. Dust with icing sugar, serve immediately. Makes about 40 pastries Note: Ricotta cheese may be substituted for Anari
