Add garlic and cook and stir a few minutes. Break vermicelli into short lengths ( 2 to 3 inches ) and add gradually to the skillet and cook and stir until they are opaque and browned about several minutes, stirring frequently . Then add seasonings, chilis and tomato sauce, blending well. Add the water, bring to a boil and cover and cook low/simmer heat until noodles are cooked and tender, about 10 minutes or so. Stir in cooked chicken ( or beef ) and heat well. Adding shredded cheese as a garnish is optional. Yield: 4 servings.
