2 1/4 cups whole wheat pastry flour 1 tsp baking powder 3/4 tsp baking soda dash salt 1 cup organic sugar 1 cup coconut milk 2 ripe bananas 1/2 cup cranberry applesauce or plain applesauce 1 tsp vanilla ( optional ) A nice alternative from the regular white flour banana muffin recipes. Made these for my vegan friends and relatives. These are very moist and tasty. Sift dry ingredients together. Combine wet ingredients in blender together or use a hand blender to puree banana in wet ingredients. Combine both wet and dry mixtures and blend well. Place in greased muffin tins and bake center oven rack, 400F until light browned and tested done, about 20 to 25 minutes. Makes about 10 muffins.

It sounds great!I'm not a vegan,but I am a vegetarian and it's nice to know there are people out there who relize that we're out there too!
