from B.C., Canada 1 cup peanuts (lightly toasted) and cashews mixed (raw) 3 cups coconut milk or water 4 T. maple syrup 1/2 t. vanilla 1/4 t. salt 1 T. soy milk powder 1/2 cup coconut or soy oil or sesame oil Blend all ingredients (except oil) in blender. Slowly add the oil while blending at high speed. Put in bowl and freeze. Whip and freeze again. Serve before it gets too hard.
