1, 8 oz wheel of Brie cheese 10 sheets of phyllo dough 2/3 cup fresh blueberries 1 Tbs fresh lemon juice 1/2 tsp cinnamon 2 Tbs sugar Cooking oil spray Combine blueberries, lemon juice and sugar. Set aside. Arrange phyllo sheets on a baking sheet. Place wheel of Brie in center. Carefully spoon and mound on berry mixture over Brie. Fold the edges of the top phyllo sheet over the top of the cheese, closing loosely on the top. Spray lightly with cooking spray, then repeat with remaining sheets. Bake 375F for about 25 minutes or phyllo is lightly browned. Serve immediately. Note: I prefer to remove the top rind of the Brie. Serves 6 as an appetizer.
