from India 1 cup curd 2 medium brinjal (eggplant) 2 green chilies 1 tblsp oil 1 tsp mustard powder 1 tsp cumin powder 1/2 tsp asafoetida 1 tsp methi powder 1/4 tsp til seeds 2 sp cut coriander Split the green chilies in half and cut the brinjal into small pieces. Put the oil in a hot pan and once the oil is hot, add green chilies. When the chilies change color, add the mustard powder, cumin powder, and asafeotida. Reduce heat to medium. Add brinjal pieces to the pan, mix well, and cook until it becomes soft enough to mash. Cover and cook, stirring occasionally. Let it cool. Mash the cooked brinjal and add curd to it. Decorate it with coriander and til seeds.
