Zucchini Pancakes 3 medium zucchini, peeled & grated 1/2 medium onion, chopped few sprigs fresh parsely, chopped 2 TBS grated cheese salt & pepper 2 eggs 1/2 - 3/4 cup flour seasoned bread crumbs olive oil Peel & grate zucchini. Press water out of zucchini. Let stand in colander for 20 to 30 minutes to dry a bit. Add onion, parsley, cheese, salt & pepper and eggs; mix well. Starting with 1/2 cup of flour, add the flour to the zucchini mixture until there is a loose batter. If mixture is still too loose after all the flour has been used, add seasoned bread crumbs, a little at a time. In a heated non-stick pan with oil added, drop pancake mixture, 1 TBS at a time for small pancakes. Flip pancake after it has browned on one side. Repeat with remaining batter. Zucchini Pancakes

3 medium
zucchini, peeled & grated
1/2 medium
onion, chopped
few sprigs fresh parsely, chopped
2 TBS grated

salt & pepper

olive oil

Peel & grate zucchini. Press water out of zucchini. Let stand
