Place in colander and press to rid excess moisture. Then place drained vegetables in a hand towel and wring and squeeze out excess liquid. Combine with remaining ingredients and mix well. Form into 12 patties by hand or desired size. Heat some oil in a heavy duty pan on medium high heat. Fry latkes a few minutes on each side or until browned on each side, turning only once.
