The dash of sugar and chicken bouillon add a wonderful flavor dimension to the garden fresh zucchini. In a saucepot with a small amount of olive oil sauté onion and then garlic to soften.. Add zucchini, tomatoes, parsley and cook and stir over medium heat for several minutes. Reduce heat and add, sugar, salt and pepper and bouillon. Cover and simmer until zucchini is almost tender. Do not overcook or zucchini with be too mushy. Add and stir in the peas and cover off heat a few minutes. No liquid is needed since the zucchini and tomatoes produce some liquid. If desired, stir in some kernel corn and canned mushrooms for more flavor and color. Fresh chopped basil or parsley is a good garnish too.
