1. Pear Mousse

3 very large ripe ( for example Royal Riviera ) pears or 6 smaller ones
1/2 cup butter melted
1 cup sugar
2 Tbs fresh lemon juice
1/4 cup brandy
1 cup heavy cream

We got a gift box of Royal Riviera Pears. We loved them ripe but I also made pear mousse and some other pear recipes. The mousse is especially nice served over chocolate cake as the colors and flavors blend nicely.

Peel and core pears and chop coarsely.
Place pears in pot with sugar and butter and lemon juice and cook and stir over low heat 15 to 20 minutes. Let cool slightly and place in blender and puree smooth. Add the brandy and mix well. Cool completely. Whip heavy cream and blend into cooled pear mixture. Chill well for several hours. Serve in dessert glasses and garnish with a mint sprig. Or serve to garnish chocolate cake
Yield 6 servings.

Farmer's Breakfast

(just sent this very same one yesterday 1st Jan, when another part of the world still was 31st Dec, and so here I am sending another one today 2nd Jan, where a part of this world is still on the 1st Jan 2008, Happy New Year again)

Basic ingred:
1lb of potatoes
2 stripes/pieces of bacons
½ cup of corn oil
3
eggs
½ cup of
milk
a
pinch of salt and a bit of pepper, and a tiny pinch of cinnamon
1 spring onions (makes about 2tbl spoon of chopped spring onions)
1 tiny branch of fresh
basil if available (makes 2tbl spoon of fresh chopped up basil)
2oz of
butter
a
tomato or two
a few leaves of (what's available)
lettuce

Basic putting it all together:
Put the ½ cup of
corn oil in a pan that will then fit 2lb of potatoes.
Heat the
pan and fry the chopped up potatoes until they are almost cooked and put in the chopped up bacon.
Meanwhile, as the potatoes and
bacon are cooking in the pan, the 3 eggs are beaten and ½ cup of milk plus salt & pepper, and cinnamon have all been blended into the mixture bowl.
Then
drain the corn oil out of the pan, leaving just enough to keep sizzling but doesn't flood the pan so to speak, then pour the egg mixture into the pan, and while still stirring, put the chopped up spring onion and basil. Stop the stirring and leave the pan to set the fried potato cake. Then put the butter in, let it melt in and turn the stove off.
Get a serving plate to tip the whole
pan over.
It can be halved for 2 or cut into 3 depending on the appetite.
Serve or garnished with sliced tomatoes and
lettuce. (Breakfast could begin with a glass of fresh orange juice before this main meal, then finish with fresh brewed coffee)

Yes, i like it when i have extra information from anyone, like one way back a few years ago, one of the simpleinternet recipe i received was with extra info, it was about
Rice-Wine that was not to be mistaken with Sake. Thank you for that, even if i didn't make it to get back and gave a comment.



3. Vegan Whole Wheat Banana Muffins

2 1/4 cups whole wheat pastry flour
1 tsp baking powder
3/4 tsp baking soda
dash salt
1 cup organic sugar
1 cup coconut milk
2 ripe bananas
1/2 cup cranberry applesauce or plain applesauce
1 tsp vanilla ( optional )

A nice alternative from the regular white flour banana muffin recipes. Made these for my vegan friends and relatives. These are very moist and tasty.

Sift dry ingredients together. Combine wet ingredients in blender together or use a hand blender to puree banana in wet ingredients. Combine both wet and dry mixtures and blend well. Place in greased muffin tins and bake center oven rack, 400F until light browned and tested done, about 20 to 25 minutes. Makes about 10 muffins.

4. Cheesecake Flambé

Your own favorite cheese cake recipe
OR
3 , 8 oz pkg
cream cheese
2 cups
sour cream
4
eggs
1 cup
sugar
2 tsp
vanilla
2 tsp fresh
lemon juice
dash salt
1 can of
cherry or blueberry pie filling or your favorite topping

Flambé:
1 Tbs
lemon extract

Here is my New Years dessert for this year. Just a twist on a standard recipe. Happy New Year 2008 to all.!!!!

Dust a buttered 9 inch springform pan with graham cracker crumbs or use a graham cracker- nut crust of your choice.

Beat eggs with sugar until fluffy. Beat room temperature cream cheese and sour cream with salt and vanilla until smooth . Gently bend in the egg mixture. Pour into cheesecake pan. Bake 350 F for crust fill pan and 325 F for no crust filled pan and bake 45 to 60 minutes OR until cheesecake appears set. Cool well and then chill for several hours- best over night . When well chilled and ready to serve, add your topping .

To Flambé: When ready to serve: pour about one tablespoon
lemon extract over the topping. Ignite with a long match and let extract burn out.

Note: I am doing a
cheese cake flambé for New Years. I never use a crust - just dust the buttered pan with crumbs.

One doesn't have to use
lemon extract either. . Warm up some rum or brandy instead and careful when you flambé.

5. Vegan Chocolate Cheesecake

Crumb Crust:
½ cup graham cracker crumbs
Dash of Splenda or other artificial sweetener
1 tablespoon of
olive oil

Mix
graham cracker crumbs, Splenda and olive oil. Coat ramekin around the edges with crumbs. Bake at 325º for 5 minutes.

Filling:
1 package silken
tofu
1 whole squeezed
lemon juice
2 Tablespoons Splenda or other artificial sweetener
3 teaspoons
cocoa powder
½ cup
chocolate soymilk

In a blender, mix all filling ingredients until
thick and creamy. Pour into 4 small ramekins. Bake at 325º for 15 minutes.
