Brasilian Chicken in Piri Piri Sauce ... by food.chat

Serves 6

1 roasting chicken

Marinade
8 garlic cloves, crushed
1 pinch salt
juice of 2 lemons
1 teaspoon bay leaf powder
2 teaspoons paprika
2 tablespoons softened butter
pinch salt

Piri Piri sauce
4 tablespoons ground piri-piri pepper
100 ml olive oil
juice of 1/2 lemon

Mix all ingredients for the marinade together. If you find it annoying crushing up the garlic you can buy it pre-crushed from the shops.

Using a sharp knife, cut chicken into six pieces so that you have the breast and lower part of the chicken as well as the 4 drumsticks and wings, (visualize the look of the chicken at Nando's). Cut off any excess fat but leave most of the skin as it will add to the flavor. Make several small incisions into the chicken to later help it absorb the marinade. Soak the chicken well in the marinade and allow it to marinate in the fridge for at least 1 hour.

Meanwhile mix the Piri Piri seasoning with the lemon juice and the oil. You can find Piri Piri seasoning easily from the shops and it saves you having to chop if 10-12 red chillies and chop up a bay leaf and such, just makes the process a lot simpler. Also add a pinch of salt.

Preheat the grill and insert the chicken. Bask the chicken frequently with any excess marinade.Turn the chicken frequently and make sure it doesn't burn. Cook for approximately 30 minutes.

Remove the chicken from the grill/BBQ and allow it to cool before lathering it in the Piri Piri sauce. Serve with potatoes and what ever else you desire. Charcoal grill or BBQ preferred but gas grill works almost as well.

Fancy Green Beans ... by food.chat

Recipe courtesy Paul Deen @ Food Network

I just made this a couple of weeks ago and my family loved it so much that I'll make it again next week for Thanksgiving!

Serves 6 - 8.

2 tablespoons teriyaki sauce
1 tablespoon honey
1 tablespoon butter
1 tablespoon fresh lemon juice
1 1/2 pounds fresh green beans
2 slices bacon
1/2 cup red bell pepper strips
1/2 cup thin onion wedges
1/2 cup whole cashews

In a small bowl, stir together the teriyaki sauce, honey, and butter.

Fill a bowl with cold water and ice cubes.

Bring a large pot of water to a boil and add the lemon juice. Drop in the beans and cook for 4 to 5 minutes, or until beans are bright green. Drain the beans in a colander and then plunge them into the iced water. Drain again and set aside.

In a skillet, cook the bacon until very crispy, crumble and set aside. Saute the bell pepper and onion in the hot bacon fat for 2 minutes. Add the beans, cashews, and bacon to the skillet. Add the teriyaki-honey sauce and toss gently.

Flax Seed Crunch ... by rcoen

1 Tbs. flax seeds
1 Tbs. sesame seeds
1 Tbs. sunflower seeds
8 almonds
1 Tbs. pumpkin seeds
1 Tbs. honey
cup raisins
4 Tbs. hot water

You are going to feel like a kid on Christmas eve fighting to get to sleep because of your excitement and expectation of breakfast in the morning.

Grind all dry ingredients in coffee grinder. You may have to separate the mix into two batches.

Grind raisins or date pieces until soft. Mix all dry ingredients, then add honey and hot water to desired texture. This will thicken in a matter of one to two minutes so don’t be afraid to allow it to be a little runny. Almonds can be replaced with just about any nut. Raw cashews are simply heavenly.

You are looking at a good 700 calories which is far less than a typical bacon and eggs breakfast. And this beauty has oils to help emulsify the accumulated havoc that has been wreaked upon your arteries by a heavy, sticky, cholesterol-laden, saturated-fat-filled, colon-clogging, pimple-producing, cancer-encouraging, disease-contributing, brain-dulling, old-fashioned, fat-fried breakfast.
