Yield 5 cups

12 – 14
sweet-tart apples
2 cups
apple cider or juice
sugar
ground
cinnamon
ground
allspice
ground cloves
freshly ground
nutmeg

Lightly oil
crockpot. Don’t peel, but wash, core and quarter apples. Put in crockpot. Stir in cider. Cover and cook on low for 10 – 18 hours (or high for 2 – 4 hours).

Put
soft fruit in food mill to remove skins. Measure fruit back into crockpot. For each pint (2 cups) of fruit add: 1 cup sugar, 1 teaspoon cinnamon, 1/2 teaspoon allspice, 1/2 ground cloves and 1/2 teaspoon freshly grated nutmeg. Stir well. Cover and cook on high for 6 to 8 hours. Stir every 2 hours. Remove cover after 3 hours to allow fruit and juice to cook down. Spoon into hot canning jars and proceed according to canning jar directions. Or spoon into freezer containers. Allow
apple butter to cool and then store in freezer.


Banana Quark Cream ... by butterflydog

2 ripe bananas
250
g Quark ( you may also use soft tub cream cheese, or sour cream or mascarpone cheese if you wish )
1 Tbs
lemon zest
2 Tbs
milk
1 Tbs
honey or to taste
2 Tbs chopped
nuts


Easy, quick, delicious and healthy esp after a
heavy meal. Simple ingredients for a surprisingly good dessert! Multiply as needed.

Mash bananas. Mix remaining ingredients except nuts. Blend bananas well with cheese mixture. Sprinkle with the nuts. Perhaps top with some grated nutmeg also.

oil, as desired (I use
olive)
vinegar (I like white or red wine)
herbs (parsley, basil, dill, etc.)
salt and pepper, to taste
Splenda for sweetness


I have a diabetic relative who loves his
potato salad but really never eats it anymore. I read some tips to lower the glycemic index and perhaps some diabetics can benefit. I know each is affected differently by what one eats and perhaps these tips can help some make dietary choices. Cooking potatoes ahead of time and chilling overnight decreases the glycemic index and slows down the absorption of sugar and starches. Boil the potatoes ahead of time and refrigerate overnight. The next day, make the dressing with vinegar and olive oil -- not mayo -- and mix with the potatoes. Both chilling and using vinegar neutralize starch's blood-sugar effects. One thing to remember again is not to use mayonnaise but oil and vinegar dressing instead for a heart healthy recipe
Some studies show that
vinegar also reduces the glycemc index plus help one lose weight!

Hope these

Use your favorite method to cook potatoes. Cool, till able to
peel.
Cover and chill well overnight. Then
cube potatoes and mix with your favorite oil and vinegar dressing, sweetened with something like Splenda.

Yield: depends on how many potatoes one uses.

In
cocktail shaker 3/4 full of ice combine everything, shake well and strain into glass.
