This Hungarian cocoa sponge cake recipe can be the base for many elegant desserts including somloi galuska or trifle.

Use a
light hand when sifting in the flour so as not to deflate the batter.

Makes a 13x9-inch cocoa
sponge cake layer
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:

3 large
room temperature eggs
1/3 cup
sugar
1/3
cake flour + 1 tablespoon cake flour
2 tablespoons Dutch-processed
cocoa powder
Pinch salt

1. Place rack in middle of oven and heat to 350 degrees. Lightly
butter a 13x9-inch pan and line with parchment.

2.
Combine
eggs and sugar in stainless-steel bowl or stand mixer bowl. Place over (not in) a simmering pot of water on medium heat, whisking constantly, until eggs are warm to the touch and sugar has dissolved, about 1 minute.

3. Using the
whisk attachment of a stand mixer or electric handheld mixer on high speed, beat until the egg-sugar mixture has tripled in volume, about 3 minutes.

4. Meanwhile, in a medium bowl,
combine flour, cocoa pwoder and salt. In two additions, sift the flour-cocoa powder-salt mixture over the egg-sugar mixture, carefully folding it in so as not to deflate the batter.

5. Spread the
batter evenly in the prepared pan and bake about 12 minutes or until the center springs back when lightly pressed. Remove from oven and cool in pan 3 minutes.

6. Run a
knife around the edge of the sponge cake to loosen it. Then cover the pan with a sheet or parchment paper and another
baking sheet and invert the sponge cake. Lift off the 13x9-inch pan and carefully peel off the parchment paper. Let cool completely.


Turkey Hash ... by food.chat

Serves 4

3 russet potatoes, washed and diced 1/4" cubes
4 slices bacon
8 ounces
cooked turkey
3 tablespoons red onions, diced 1/4"
2 tablespoons red pepper, diced 1/8"
Salt, to taste
Peppercorns, freshly cracked
Paprika

Cook the
bacon in a large skillet until very crispy. Remove the bacon and drain it on a paper towel. Once cool, chop the bacon into small pieces. Reserve.

Add the potatoes to the
pan and cook for 10-15 minutes until they begin to brown and get crispy. Push the potatoes to one side of the pan and add your onions and peppers. Cook for 3-4 minutes and add the
turkey. Cook for one to two more minutes and stir all together. Season the hash with salt and cracked pepper. Color with the paprika. Add the chopped bacon pieces. Stir again.

Place a generous pile of the
hash in the center of four warm plates and top each pile with 2
eggs over-easy.

2 tablespoons butter, softened
1/2 cup
sugar
2 teaspoons
baking powder
1/2 teaspoon
salt
1/2 teaspoon ground
cinnamon
1/4 teaspoon
baking soda
1/4 teaspoon ground ginger
1/8 teaspoon freshly grated
nutmeg or a Dash of ground nutmeg
1/8 teaspoon ground cloves
1/2 cup canned
pumpkin
1/3 cup
buttermilk
1
egg
1
egg yolk
1/2 teaspoon
vanilla
2 cups
all-purpose
flour
Vegetable oil for
deep-fat frying
Spiced
Sugar


1. In a large bowl,
beat butter with an electric mixer on medium to high seed for 30 seconds. Add the 1/2 cup sugar,
baking powder, salt, cinnamon, baking soda, ginger, nutmeg, and cloves. Beat until combined, scraping sides of bowl occasionally. Beat in pumpkin, buttermilk, egg, egg yolk and vanilla until combined. Using a wooden spoon, stir in flour until well combined. Cover and chill 3 hours.

2. On a lightly floured surface, roll
dough to a 1/2-inch thickness. Cut with floured 2-1/2-inch doughnut cutter, dipping cutter into flour between cuts. Reroll as necessary.

3.
Fry doughnuts, 2 or 3 at a time, in deep, hot fat (365 degrees F) about 2-1/2 minutes or until golden, turning once. Using a slotted spoon, removed doughnuts from oil and drain on paper towels. Repeat with remaining doughnuts and doughnut holes. Coat warm doughnuts in Spiced Sugar. Serve warm or at room
temperature. Makes about 12 doughnuts plus holes.

Spiced
Sugar: In a small bowl, stir together 1/2 cup sugar, 2 teaspoons ground cinnamon, and 1 teaspoon freshly grated nutmeg or 1/2 teaspoon ground nutmeg.

Egg Beaters equivalent of 2 eggs
2 c.
pumpkin
3/4 c. white
sugar
1/4 tsp.
salt
1 tsp.
cinnamon
1/4 tsp. ginger
1-1/3 c. 2%
milk

Mix ingredients in order given. Put in unbaked
shell. Bake until knife inserted in center comes out clean. Bake 15 minutes at 425 degrees, 45 minutes, at 350 degrees.
