Huevos con Patatas

Huevos en patatas (eggs in potatoes) (spain)
from: The Wonderful world of cooking
4 baked potatoes
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
1 teaspoon powdered saffron(I use 1/4 -1/2 teaspoon of Ground Turmeric or
Bija Supreme Red annotto)
4 eggs
watercress

Cut top from potatoes. Scoop out pulp and mash.
Add salt, pepper,butter, and saffron. Mix
stuff potato shells with mixture, forming depression in top of each.
Break an egg into each potato top
Bake at 350 deg F for 10 minutes or until eggs are set.
Replace potato tops; garnish with watercress.
serves 4
