Banana Tea Bread
1 3/4 cups sifted flour
2 tsp baking powder
1/4 teaspoon baking soda
1/2 tsp salt
1/3 cup vegetable shortening
2/3 cup sugar
2 eggs, well beaten
1 cup mashed (2-3) ripe bananas
1/2 tsp cinamon
pinch of grated nutmeg
Preheat oven to 350 degrees
Sift together flour, baking powder, baking soda and salt.
Cream shortening, add sugar gradually and continue working until light and
fluffy. Add the eggs and beat well. Add flour mixture alternately with the
bananas, a small amount at a time, beating after each addition until
smooth. Stir in the cinnamon and nutmeg.
Turn into a well greased 8 1/2 X 4 1/2 X 3 inch loaf pan and bake about 70
