Shigumch'i Namul

Someone very recently requested this recipe. This is a type of spinach salad that is served in Korean restaurants.

Shigumch'i Namul (Spinach Salad)

1/2 cup water
1 lb fresh spinach
2 teaspoons soy sauce
1 tablespoon dark sesame oil
1/2 teaspoon finely chopped garlic
1 tablespoon toasted sesame seeds

In large saucepan, bring water to a boil over high heat. Add spinach, cover, and reduce heat to medium-high. Cook for 2 to 3 minutes or until bright green. Drain in colander When cool, gently squeeze out excess water with your hands Cut spinach into 2 inch lengths and place in a large bowl Add remaining ingredients and mix well Serve at room temperature.
