Fortune Cookies 2

1/4 c. sifted cake flour
2 Tbsp. sugar
1 Tbsp. cornstarch
a dash of salt
2 Tbsp. cooking oil
1 egg white
1 Tbsp. water

Before you start, write fortunes on small strips of paper for enclosing in cookies.

Stir together the flour, sugar, cornstarch and salt.
Add the cooking oil and egg white; stir until mixture is smooth.
Add water and mix thoroughly.
Make one cookie at a time.
On lightly greased skillet or griddle, pour 1 tablespoon of batter; spread to 3 1/2-inch circle.
Cook over low heat until lightly browned, about 4 minutes.
Turn with wide spatula; cook 1 minute more. Working quickly, place cookie on pot holder; put fortune in center.
Fold cookie in half, then fold again over edge of bowl.
Place cookies in a muffin pan to cool.
Makes 8.
