Hungarian Stewed Potatoes

8 Medium Boiling Potatoes
1 Medium Onion
1/4 Cup Butter
1 tsp. Salt
1/2 tsp. Paprika
1/4 tsp. Pepper
** 1 Cup Sour Cream, if desired

Peel and cut potatoes and onions into 1" cubes. Bring 2 cups water to boil in a large pot and add potatoes and onions. Cook covered on low heat for about 15 minutes or until potatoes are almost done, add butter, salt, paprika and pepper and turn down very low, keeping pot covered and continue cooking for about 5 more minutes or until potatoes feel done when pierced with a fork. We serve this in our family with Stuffed Peppers...recipe also found on this site...and cucumber onion salad.

** You can also fold a cup of sour cream into the potatoes when they're done and sprinkle with additional paprika. "Egeszsegere" (Hungarian for "To Your Health!")
